西湖國小延續第二年的小田園計畫,上學期陳美鳳老師帶著五年1班小朋友採收成熟的櫻桃蘿蔔,接下來交棒給黃瓈慧老師進行食農教育,這一季的主題是「秋季醃菜香」,全班一齊進行醃漬櫻桃蘿蔔的任務。
首先將蘿蔔葉摘除,然後將櫻桃蘿蔔清洗乾淨,再用開水沖洗一次,鮮紅欲滴、小巧玲瓏的櫻桃蘿蔔們集結起來實在是視覺的享受。接下來考驗各組的刀工了,孩子們利用刨刀,將蘿蔔刨成薄薄的一片,這樣品嘗的時候,口感會比較清脆。刨削完成後,小朋友加入適當的醋、糖及檸檬汁,適度拌勻然後裝罐,再放進冰箱中冷藏,大約三天後就可食用了。此時,花青素慢慢地釋放出,一罐罐鮮紅色的醃蘿蔔真讓人想食指大動啊!
